Let's get started by making the pastry dough. In a big bowl, mix the flour and salt. Add in the cold butter pieces and blend them into the flour until they look like small crumbs, either using a tool or your hands.
Slowly pour in the cold water and mix until the dough sticks together. Shape it into a ball, wrap it up in plastic, and let it chill in the fridge for about 30 minutes.
While the dough rests, whip up the sweet cream filling. In another bowl, beat together the cream cheese, sugar, and vanilla extract until it's nice and smooth. Add the eggs one by one, mixing well each time.
Now, preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
Roll out the chilled dough on a floured surface until it's about 1/8 inch thick. Cut it into small squares or rectangles.
Scoop a bit of the sweet cream filling onto each piece of dough, then fold it over to make a triangle or rectangle. Press the edges together with a fork to seal them up.
Pop your Snoogles in the oven and bake for around 20-25 minutes, until they turn golden brown and the filling sets.
Let them cool down a bit before digging in. You can sprinkle some powdered sugar on top for an extra bit of sweetness. Enjoy!
