Here's how to make Shendetlie:
Toast the chopped walnuts in a dry skillet on medium heat until they smell good. Be careful not to burn them. Let them cool.
Heat the honey in a saucepan on low heat. Mix in the cinnamon, cloves, and nutmeg. Heat it gently for 5-7 minutes, stirring now and then.
Add the toasted walnuts, lemon zest, sugar, and a pinch of salt to the honey mix. Stir well and cook for another 2-3 minutes.
Take the mix off the heat and let it cool for a bit. It should get firmer and easier to handle.
While still warm, shape the mix into small balls or whatever shape you like using your hands or molds.
Put the shaped sheet on a tray or plate to cool completely. Once they're cool and solid, they're ready to eat.
