- 2 cups cooked rice preferably chilled
- 2 tablespoons vegetable oil
- 2 eggs lightly beaten
- 1/2 cup cooked chicken diced or cooked pork
- 1/2 cup mixed vegetables such as carrots, peas, and corn
- 2 green onions thinly sliced
- 2 tablespoons soy sauce
- 1 tablespoon oyster sauce
- 1 teaspoon sesame oil
- Salt and pepper to taste
Heat 1 tablespoon of vegetable oil in a big frying pan or wok over medium heat. Crack in the eggs and scramble them until they're cooked. Take them out of the pan and set them aside.
In the same pan, pour in the rest of the vegetable oil. Toss in the diced chicken or pork and stir it around until it's heated up.
Now, add the mixed veggies to the pan and stir them around until they're cooked but still a bit crunchy.
Add the cold rice to the pan and stir it around, making sure to break up any big clumps. Cook it until it's heated through and starts to turn a little golden.
Put the scrambled eggs back into the pan and mix everything with the rice and veggies.
In a small bowl, mix together the soy sauce, oyster sauce, and sesame oil. Pour this sauce over the rice mixture and give it a good stir to coat everything.
Add some salt and pepper to the fried rice to make it taste just right. Toss in some sliced green onions for extra flavor.
Keep cooking everything for another minute or two, stirring it constantly, until it is heated through and mixed together nicely.

NOTES
For the rice, opt for long-grain varieties such as jasmine or basmati. Cook it as directed on the package. Before frying, let the rice cool down completely. This step is crucial to avoid it turning mushy when cooked again.
